Olive Oil and Orange Loaf
This deliciously light cake, made with Olive Oil and Orange transports you straight to the Mediterranean.
Serves 8 - 10
150g caster sugar
Zest and juice of 1 medium orange
150ml olive oil
200g plain flour
1 tbsp baking powder
Preheat oven to 200°C/Fan 180°C/Gas 6.
Line a 2lb loaf tin with greaseproof paper or better still a loaf liner.
Whisk together the eggs, sugar and orange zest until light and airy.
Continue to whisk and add the olive oil bit by bit, followed by the orange juice and milk.
Sift together the flour and baking powder and add, in 3 batches, to the cake mix gently folding in each batch well before adding the next.
Pour the cake batter into your prepared tin and bake for 40-45 mins, check it is cooked by inserting a skewer into the centre, allow to cool in the tin for 10 mins before turning out and allowing to cool.
I love to eat this cake still warm with a generous dollop of natural yogurt on the side, of course it's equally delicious on it's own with a coffee on the side.
As with any loaf cake it's easily transportable so makes a great picnic bake or gift when visiting friends
